Semolina dumplings with plum filling and vanilla sauce

Ingredients

  • 1 Vanilla pod
  • 1 Organic Orange
  • 500 ml Milk
  • 40 g + 5-6 tablespoons sugar
  • 100 g + 1 tablespoon butter
  • 140 g Common wheat semolina
  • 2 Eggs (size M)
  • 8 frozen plum halves (approx. 15 g each)
  • 50 g Breadcrumbs
  • 1/2 TEASPOON Cinnamon
  • 150 g Vanilla sauce
  • 50 g chocolate sauce
  • 7-10 Tbsp Mint

Directions

    Cut the vanilla pod in half lengthwise. Scrape out the pulp. Wash orange hot, grate dry and finely grate the peel. Boil half of the pod and the pulp with milk, orange zest, 40 g sugar and 100 g butter.

    Let semolina trickle in while stirring constantly. Simmer at medium heat until the mixture comes off the bottom of the pot. Remove the pod. Pour the mixture into a bowl and stir in the eggs.

    Leave to cool for about 2 hours.

    In the meantime, caramelise 2 tablespoons of sugar in a pan. Add the plums, 50 ml water, the rest of the vanilla pod and pulp and simmer for about 2 minutes, stirring occasionally. Remove from the heat and let it cool down.

    Form 8 dumplings from the semolina mixture. Press a depression into each dumpling and add a plum. Close the opening and form into round dumplings. Boil up plenty of water in a pot. Season with 2-3 tablespoons of sugar and salt.

    Let the dumplings simmer for about 10 minutes. Take out with a skimmer and drain on an oiled baking tray.

    Melt 1 tablespoon of butter in a coated pan. Mix breadcrumbs, 1 tablespoon sugar and cinnamon and add to the butter. Caramelise for about 2 minutes while stirring. Add the dumplings and turn in. Arrange on plates with vanilla and chocolate sauce.

    Wash mint, shake dry. Decorate dumplings with it.
