Clean and wash the broccoli and cut it into very small florets. Peel and finely chop the onion. Heat the fat in a saucepan. Sauté diced onion in it. Deglaze with 700 millilitres of water. Stir in soup powder and bring to the boil. Add broccoli and let everything simmer for twelve minutes, stirring occasionally.
In the meantime, boil the tortellini in salted water for ten to twelve minutes. Cut the ham into small cubes. Drain the pasta. Add ham and noodles to the soup. Refine with crème fraîche. Season to taste with salt, pepper and nutmeg
