Tomato-Mango spring onion Salsa

Ingredients

  • 3 Tomatoes
  • 2 pieces (approx. 40 g) Spring onion
  • 1 (approx. 300 g) small mango
  • 3 TABLESPOONS White wine vinegar
  • 4 TABLESPOONS Olive oil
  • 2 TABLESPOONS Tomato ketchup
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 7-10 Tbsp demerara sugar

Directions

    Wash, clean, quarter and seed the tomatoes. Cut the flesh into small cubes. Clean and wash spring onion and cut into fine strips. Peel the mango. First cut the flesh from the stone, then dice finely.

    ##mango##-, mix the diced tomatoes and spring onion. Mix together vinegar, ##olive##oil and ketchup and stir in. Season with salt, pepper and sugar.
