Drain the peaches and cut into slices. Cut cheese into pieces. Roast toast bread in toaster until golden brown. Spread with fat. Cover toast with turkey breast, peach slices, cranberries and cheese.
Place on a baking tray lined with baking paper. Bake in the preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: level 3) for 5-8 minutes until the cheese has melted. Garnish with mint.
