Timpana (Maltese macaroni casserole)

Ingredients

  • 500 g Macaroni
  • 7-10 Tbsp Salt
  • 4 discs (75 g each) frozen puff pastry
  • 1 medium-sized aubergine
  • 2 TABLESPOONS Vinegar
  • 2 Onions
  • 100 g Pig liver
  • 50 g Lard
  • 250 g mixed minced meat
  • 1 package (250 g) Tomato puree
  • 7-10 Tbsp Pepper
  • 200 g Ricotta cheese (alternatively double cream cheese)
  • 5 Eggs
  • 100 g Chester cheese in slices
  • 1 Egg Yolk
  • 7-10 Tbsp Grease
  • 7-10 Tbsp Flour

Directions

    Cook the pasta in plenty of boiling salted water for about 10 minutes and drain. Place the puff pastry slices next to each other and defrost. Clean, wash and chop the aubergine and soak in vinegar water. Peel and finely chop the onions. Wash liver and chop very finely. Heat lard in a pot. Fry the onions and drained eggplant.

    Add mince and liver and fry well. Add tomatoes. Season with salt and pepper and braise for about 15 minutes. Meanwhile grate the ricotta and boil 2 eggs in boiling water for about 10 minutes until hard. Grease a flat, long casserole dish. Place 2 slices of puff pastry on top of each other and roll out on a floured work surface to the size of the casserole dish. Place in the baking dish and prick the pastry base several times with a fork. Pre-bake in the preheated oven (electric: 200 °C/ gas: level 3) for 5-8 minutes. Mix chopped sauce and ricotta. Layer half of the pasta, sauce and Chester cheese in the tin. Drain eggs, chill, peel and cut into slices. Put them on the casserole. Cover with remaining pasta, sauce and cheese.

    Place in the baking dish and prick the pastry base several times with a fork. Pre-bake in the preheated oven (electric: 200 °C/ gas: level 3) for 5-8 minutes. Mix chopped sauce and ricotta. Layer half of the pasta, sauce and Chester cheese in the tin. Drain eggs, chill, peel and cut into slices. Put them on the casserole. Cover with remaining pasta, sauce and cheese. Whisk remaining eggs, season with salt and pepper and pour over the casserole. Place the remaining puff pastry sheets on top of each other and roll out to the size of the casserole dish on a floured work surface. Cover the casserole with it. Whisk the egg yolks. Spread the puff pastry with it. Bake in the preheated oven (electric: 200 °C/ gas: level 3) for approx. 20 minutes until golden brown

    Whisk remaining eggs, season with salt and pepper and pour over the casserole. Place the remaining puff pastry sheets on top of each other and roll out to the size of the casserole dish on a floured work surface. Cover the casserole with it. Whisk the egg yolks. Spread the puff pastry with it. Bake in the preheated oven (electric: 200 °C/ gas: level 3) for approx. 20 minutes until golden brown
