Ingredients

Servings: 4
  • 1 piece (approx. 20 g each) Ginger
  • 2 Garlic cloves
  • 2 red chillies
  • 1 rod Lemongrass
  • 6-8 TABLESPOONS Soy sauce
  • 7-10 Tbsp sugar, salt
  • 1 collar Coriander
  • 600 g Salmon fillet (without skin)
  • 1 small radish
  • 4 Tomatoes
  • 1 Organic Lime
  • 1 red onion
  • 4 TABLESPOONS Oil
  • 2 TABLESPOONS Sesame
  • 7-10 Tbsp cling film, ice cubes

Directions

    For the marinade, peel and finely chop the ginger and garlic. Clean the chilli, cut lengthwise, remove seeds, wash and chop. Clean and wash lemon grass and cut into very fine rings. Bring lemon grass, ginger, garlic, half of the chilli, soy sauce and 1 teaspoon of sugar to the boil and remove from the heat. Leave to cool. Wash coriander, shake dry and pluck leaves. Chop the stems and stir into the marinade.

    Wash the salmon, dab dry and cut into 4 slices. Place the fish in an ovenproof dish, pour the cooled sauce over it and sprinkle with half of the coriander leaves. Cover with cling film and chill for about 1 hour.

    For the salad, meanwhile, peel and wash the radish and cut it lengthwise into strips with a peeler. Place the strips in approx. 1 l cold salt water (1 teaspoon salt) with 1 handful of ice cubes and chill for approx. 30 minutes.

    Wash and finely dice the tomatoes. Wash lime hot, dry and cut into thin slices. Peel onion and cut into fine rings. Mix everything with the rest of the chilli and 2 tablespoons of oil.

    Remove the salmon from the marinade, dab dry. Roast sesame seeds in a large pan without fat for approx. 2 minutes, remove. Heat 2 tablespoons of oil in a frying pan, fry the salmon for 2-3 minutes on each side. Add marinade and bring to the boil. Remove salmon from the stove. Drain the radish and mix with the tomato mix. Arrange salad, salmon, sesame and the remaining coriander.

    TIP: If you have roasted sesame oil in the cupboard, it should definitely be used for the tomatoes.
