Ingredients

  • 350 g Flour
  • 50 g Baking cocoa
  • 1 pinch(es) Salt
  • 200 g Butter
  • 2 Eggs (Gr. M)
  • 350 g Icing sugar
  • 1 Protein (Gr. M)
  • 1/2 TEASPOON black food paste (e.g. from Wilton)
  • 1 Msp. orange food paste (e.g. from Wilton)
  • 7-10 Tbsp Flour
  • 7-10 Tbsp Cling film
  • baking paper
  • 7-10 Tbsp Disposable piping bag
  • 7-10 Tbsp wooden skewers

Directions

    Knead flour, cocoa, salt, butter, eggs and 100 g icing sugar with the dough hooks of the hand mixer to a smooth dough. Form dough into a ball, wrap in foil and chill for approx. 30 minutes.

    Roll out the dough on a work surface sprinkled with flour to a thickness of about 3 mm. Cut out approx. 20 biscuits each with round biscuit cutters (3.5; 4 and 7 cm Ø). Place approx. 1/3 of the biscuits on a baking tray and bake in a preheated oven (electric cooker: 175 °C/ convection oven: 150 °C/ gas: see manufacturer) for approx. 10 minutes. Let them cool down on a cake rack. Bake the remaining biscuits in the same way.

    In the meantime, for the icing, mix 250 g icing sugar and egg white with the whisks of the hand mixer for about 2 minutes to a smooth glaze. Mix 1 tsp. icing with black food paste and set aside. Mix 1 tsp. icing with orange food paste and also set aside.

    Spread the biscuits one after the other first with white icing, then draw the buttons, arms and noses of the snowmen in the still moist icing with black and orange icing (this is best done with a wooden skewer). If the cast becomes too firm, stir it with a few drops of water until smooth again. Set aside about 2 tablespoons of white icing, covered. Let the biscuits dry.

    Put the cast aside into a piping bag, cut off a small tip and stick snowman biscuits together with it.
