For the basic dough: Put flour, butter in flakes, icing sugar and eggs in a bowl. First work into a smooth dough with the dough hook of the hand mixer, then with your hands.
For the apple-cinnamon stars: Cut apple rings into very small pieces. Knead the basic dough with apple pieces, 1 teaspoon cinnamon and nutmeg. Wrap in foil and put in a cool place for about 30 minutes.
Take off 100 g of the dough and put it in a cool place. Roll out the rest of the dough on a lightly floured work surface to a thickness of about 5 mm. Cut out approx. 50 stars with cutters of different sizes (2.5 cm and 3.5 cm Ø). Knead the dough again and again and roll out again. Spread on 2 baking trays lined with baking paper.
Heat the jelly in a small pot and stir until smooth. Knead 100 g dough, 1 tbsp. flour and 1 tbsp. cinnamon and make small crumbles. Brush the stars with the jelly and cover with the crumbles. Bake in the preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: see manufacturer) one after the other for approx. 10 minutes. Let the cookies cool down. Store cookies in a tin.
