Preheat the oven and baking tray (electric oven: 225 °C/circulating air: 200 °C/gas: see manufacturer). Place the first tarte flambée base on a piece of baking paper. Spread evenly with half the crème fraîche.
Place on the hot baking tray and bake in the oven on the lowest shelf for about 5 minutes.
Cut the camembert into slices. Spread half the cheese on the tarte flambée base and bake for 2-3 minutes. Prepare and bake the second tarte flambée in the same way.
Spread slices of ham and cranberries on the two tarte flambée and serve.
