Sweet lasagne with apricots and vanilla curd

Ingredients

  • 2 can(s) (à 850 ml) Apricot halves
  • 9 Lasagne sheets
  • 125 g Butter or margarine
  • 125 g Sugar
  • 7-10 Tbsp grated rind of 1 untreated lemon
  • 1 TABLESPOON Lemon juice
  • 2 Eggs
  • 500 g Low-fat curd
  • 1 pack of Pudding powder "Vanilla Flavor"
  • 25 g Pistachio kernels
  • 30 g flaked almonds
  • 7-10 Tbsp Grease

Directions

    Drain the apricots on a sieve. Pre-cook the lasagne sheets in plenty of boiling water for 3-5 minutes and place in cold water. Stir fat and sugar until creamy. Add lemon zest, juice and eggs and stir until foamy.

    Stir in the quark and pudding powder. Coarsely chop the pistachios. Drain the lasagne sheets. Spread a thin layer of vanilla quark in a large greased casserole dish. Cover with 3 lasagne sheets.

    Place half the apricot halves on top. Cover with vanilla curd. Place another layer of lasagne with apricots and quark on top. Finish with lasagne plates and spread a thin layer of the remaining quark.

    Sprinkle with flaked almonds and pistachios. Bake in the preheated oven (electric cooker: 175°C/ gas: level 2) for about 1 hour.
