Summer sausage salad

Ingredients

Servings: 4
  • 500 g Pork sausage
  • 125 g Frisée salad
  • 6 stalks of chives with flowers
  • 2-3 Spring onion
  • 1 collar Radishes
  • 150 g Gherkins
  • 4 TABLESPOONS White wine vinegar
  • 4 TABLESPOONS Olive oil
  • 1 TABLESPOON Mustard
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper

Directions

    Remove the skin from the sausage. Cut the sausage into strips. Clean, wash and thoroughly drain the salad. Wash chives, dab dry and cut into rings except for the blossoms. Clean and wash spring onions and cut into rings. Clean, wash and cut radishes into strips. Quarter gherkins lengthwise and cut them diagonally into slices.

    Put sausage, spring onions, chives, radishes and gherkins in a bowl. Whisk vinegar and mustard, fold in oil. Add to salad and mix. Season to taste with salt and pepper and marinate for about 30 minutes. Meanwhile pluck the frisée salad roughly. Fold the salad and chive blossoms into the sausage salad, season again. Tastes good with farmhouse bread
