Strawberry jelly with vanilla ice cream

Ingredients

  • 200 g washed, cleaned strawberries
  • 130 ml cherry fruit juice drink ( for diabetics
  • 7-10 Tbsp suitable; with sweetener)
  • 1 TEASPOON Lemon juice
  • 2 g vegetable binder
  • 7-10 Tbsp some sweetener
  • 1 (50 ml) scoop plain vanilla ice cream
  • 5 g crushed pistachios
  • 2 Kiwi-schijfjes
  • 11/2 discs (15 g) Wholemeal rusk

Directions

    Halve or quarter one half of the strawberries. Cut the rest into cubes and place in a pot

    Pour cherry juice and lemon juice into the strawberry cubes and bring to the boil. Add binding agent while stirring and let everything simmer for about 2 minutes. Then possibly season to taste with some sweetener. Fold in remaining strawberries

    Pour the strawberry jelly into a plate and let it cool down. Arrange vanilla ice cream on top and sprinkle with pistachios. Decorate with kiwi slices as desired. Add rusk extra
