Grilled halloumi cheese on vegetable noodles

Ingredients

  • 3 Tomatoes
  • 2 medium-sized carrots
  • 1 Courgette
  • 200 g Halloumi cheese (grilled Greek cheese)
  • 5 Stem(s) Basil
  • 1 Onion
  • 200 g Pappardelle noodles
  • 7-10 Tbsp Salt
  • 1 TABLESPOON Oil
  • 250 ml Tomato juice
  • 7-10 Tbsp Pepper
  • 7-10 Tbsp Oil

Directions

    Wash the tomatoes, cut them in half, remove seeds and cut the flesh into thin strips. Peel and wash the carrots. Wash and clean the zucchini. Cut carrots and zucchini into thin long slices with a slicer or a peeler.

    Cut the cheese into slices. Wash basil, shake dry and chop the leaves of 3 stems coarsely. Peel and finely chop the onion. Prepare pasta in boiling salted water according to package instructions.

    Heat the oil in a frying pan. Briefly sauté the onion in it, then add the tomato juice. Simmer for 2-3 minutes, then season to taste with salt and pepper. Add carrot strips and cook for 3-4 minutes.

    After about 2 minutes add the zucchini and tomatoes. Brush the grill pan with oil and fry the cheese in portions while turning for approx. 4 minutes. In the meantime drain the pasta. Add pasta and basil to the sauce and mix well.

    Arrange the pasta and cheese and garnish with the remaining basil.
