  • 2.2 kg Strawberries
  • 1 pack of (2 bags
  • 7-10 Tbsp à 25 g) Gelling agent "Gelfix Extra"(2:1; for every 1000 g of fruit)
  • 600 g + 400 g sugar
  • 7-10 Tbsp Juice of 1 lemon (approx. 6 tablespoons)

    Wash and clean the strawberries. Weigh 2 kg of flesh and cut into small pieces. Mix gelling agent and 600 g sugar in a bowl. Stir in strawberries and lemon juice carefully

    Caramelise 400 g sugar in a large pot until golden. Remove from the stove. Add the fruit mass. Stir well and bring to the boil over high heat, stirring constantly. Then let it boil for at least 3 minutes while stirring. Immediately fill up to the brim in prepared twist-off glasses. Close and let cool upside down
