Strawberry Apricot Jam

  • 1 kg cleaned strawberries
  • 400 g pitted apricots
  • 1/2-1 Pot/bunch
  • 7-10 Tbsp Lemon balm
  • 1 (5 g) Package
  • 7-10 Tbsp Citric acid
  • 1 package (500 g) "Diet Gelly Fructose"

Directions

    Chop the strawberries and apricots finely. Peel ginger and dice finely. Wash and dry lemon balm. Pluck off the leaves. Mix fruit, ginger, citric acid and jam sugar in a large pot.

    Bring everything to the boil while stirring over high heat. Then let it boil thoroughly for at least 3 minutes while stirring constantly. Stir in lemon balm

    Immediately pour jam into prepared twist-off jars. Seal, turn upside down and leave to cool for 5-10 minutes. Then allow to cool completely

    - Diet jam contains about 2/3 less sugar than

    "regular" jam. This makes it taste very fruity,

    but does not last that long

    - If you cannot get fresh ginger, you can replace it with 1/2 tsp. ground ginger or cinnamon
