Strawberries with semolina-vanilla foam

Ingredients

  • 1 kg Strawberries
  • 4-5 Tbsp Sugar
  • 2 TABLESPOONS flaked almonds
  • 1/2 l Milk
  • 7-10 Tbsp grated rind of 1/2 untreated lemon
  • 1 pinch Salt
  • 1 Vanilla pod
  • 30 g Semolina
  • 1 Egg Yolk
  • 2 Protein

Directions

    Wash the strawberries, put one strawberry aside and clean and halve the remaining strawberries. Sprinkle the strawberries with 2-3 tablespoons of sugar and let them soak a little. Roast the almonds in a dry pan until golden brown. Remove from the pan immediately and let them cool down. Put milk, 2 tablespoons of sugar, lemon zest and salt in a saucepan. Cut the vanilla pod lengthwise and scrape out the pulp. Add pulp and pod to the milk.

    Bring to the boil. Sprinkle in semolina and let it swell for about 5 minutes while stirring. Mix the egg yolks with a little water and stir into the semolina. Beat the egg white until stiff, stir some of the hot semolina mixture into the egg white, then fold the egg white loosely into the semolina. Remove the vanilla pod. Put the strawberries in a large bowl and pour the semolina foam over the strawberries. Sprinkle with almond flakes and decorate with the rest of the strawberries
