Wash the strawberries, clean them, wash them, cut them in half. Halve lemon slices. Layer the strawberries in a small cold rinsed Savar form. Place four half lemon slices and lemon balm leaves on the outer rim of the mould.
Soak the gelatine. Bring wine and 100 ml water to the boil. Season to taste with sugar, vanillin sugar and lemon juice. Squeeze the gelatine, dissolve in the wine and pour over the fruit. Chill for about 3 hours.
Turn strawberry jelly onto a plate. Decorate with lemon slices and lemon balm. Serve with lemon or vanilla ice cream.
