Sprout salad with halloumi cheese

Ingredients

Servings: 4
  • 200 g germinative sprout mix
  • 250 g Chorizo sausage
  • 1 red chilli pepper
  • 1 package (225 g) Halloumi cheese
  • 5 TABLESPOONS Oil
  • 4 TABLESPOONS dark balsamic vinegar
  • 7-10 Tbsp Pepper
  • 7-10 Tbsp Sugar
  • 7-10 Tbsp Salt
  • 1 Avocado

Directions

    Wash the sprouts in hot water and let them drip off. Cut off 4 thin slices of sausage. Finely dice the remaining sausage. Clean, wash and cut the chilli pepper, scrape out the seeds and chop the pepper finely. Cut cheese into slices of approx. 1 cm thickness

    Heat 1 tablespoon of oil in a coated frying pan. Fry the cheese for 2-3 minutes on each side, remove. Add slices of sausage to the hot frying fat, fry for 2-3 minutes while turning until crispy, remove. Add the sausage cubes to the hot fat and fry for 3-4 minutes while turning. Stir in chilli pepper, remove pan from heat. Deglaze with vinegar, loosen the frying set, season with pepper, sugar and a little salt. Fold in 4 tablespoons of oil, pour into a bowl, let cool off

    Cut the avocado in half, remove the stone. Remove the flesh from the skin, halve lengthwise and cut into slices crosswise. Carefully mix the sprouts, cheese, avocado and sauce and serve. Break fried sausage slices into pieces, sprinkle on salad
