Spinach noodles with roasted salmon

Ingredients

  • 1 Onion
  • 1-2 Garlic cloves
  • 3 TABLESPOONS Oil
  • 250 ml Vegetable broth (instant)
  • 1 package (450 g) deep-frozen leaf spinach
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 7-10 Tbsp grated nutmeg
  • 500 g Salmon Strips
  • 2 TABLESPOONS Lemon juice
  • 7-10 Tbsp Lemon Pepper
  • 4 untreated lemon slices
  • 1 package (500 g) fresh ribbon noodles

Directions

    Peel and finely chop the onion. Peel garlic and chop very finely. Heat 1 tablespoon of oil in a wide saucepan, fry the onions until translucent, add the garlic and fry briefly.

    Pour on vegetable stock, add spinach, bring to the boil, cover and defrost over medium heat for about 16 minutes. Then season with salt, pepper and nutmeg. In the meantime, wash the fish, dab dry, cut into small pieces, sprinkle with lemon juice and salt.

    Heat 2 tablespoons of oil in a frying pan and fry the fish for about 2 minutes on both sides. Then season with lemon pepper. Turn lemon slices briefly in the frying fat. In the meantime, put the pasta in boiling salted water and prepare according to the instructions on the packet.

    Drain the pasta, let it drain and mix it with the spinach. Season again with salt, nutmeg and pepper. Arrange spinach noodles and fish on plates. Garnish with lemon slices.
