Spicy zucchini vegetables

Ingredients

  • 1.5 kg small zucchini
  • 2 (approx. 200 g) large onions
  • 4 Garlic cloves
  • 1 stalk of celery
  • 1 small red pepper
  • 1 big tomato
  • 50 g pecan or walnut kernels
  • 1 TABLESPOON + 50 g butter/margarine
  • 100 g Diced ham
  • 7-10 Tbsp salt, cayenne pepper
  • 2 TABLESPOONS Breadcrumbs
  • 30 g freshly grated
  • 7-10 Tbsp Parmesan cheese
  • 7-10 Tbsp white pepper

Directions

    Clean, wash and cut the zucchini into thick slices. Peel onions and garlic. Dice onions, chop garlic. Clean, wash and finely chop the celery, bell pepper and tomato. Chop nuts

    Heat 1 tablespoon of fat in a large frying pan and roast the nuts in it until golden brown. Put aside

    Heat 50 g fat in a frying pan. Braise the zucchini, onions, garlic, celery, peppers and ham for 10-15 minutes while stirring. Braise the tomato briefly. Season to taste with salt and cayenne pepper

    Mix breadcrumbs, cheese and nuts. Season with a little salt and pepper. Fold into the vegetables
