Limoncello - lemon liqueur

Ingredients

  • 6 Organic lemons
  • 250 g Sugar
  • 1 (700 ml) bottle of vodka

    Wash the lemons hot and grate them dry. Peel the peel with a peeler in thin strips. Bring the peel with sugar and 150 ml water to the boil in a small pot, stirring occasionally until the sugar has dissolved.

    Simmer at low heat for about 20 minutes more.

    In the meantime, halve the lemons and squeeze the juice (approx. 300 ml). Pour the juice into the syrup about 5 minutes before the end of the cooking time, simmer until done. Take the syrup off the stove and let it cool down.

    Rinse 2 glasses (each containing approx. 750 ml) with boiling water and drain well. Mix the syrup and vodka, distribute with the lemon peel into the two glasses and close them tightly. Shake vigorously and leave in the refrigerator for 1 week.

    Shake vigorously once a day. Pour the finished limoncello through a fine sieve. Pour into 3 clean bottles and close them.
