Ingredients

  • 3 red chillies
  • 2 Cinnamon sticks
  • 4 Cloves
  • 2 Star Anise
  • 1 (750 ml) Flasche Tequila gold
  • 7-10 Tbsp For the orange salt :
  • 300 g coarse sea salt
  • 7-10 Tbsp grated peel of 2 organic oranges

    For the spicy Texmex chilli wash, dab dry, prick more often. Add to the tequila in the bottle with cinnamon, cloves and star anise. Leave to steep for at least 2 days. Attention: The longer the chillies steep in tequila, the hotter it gets.

    Preheat the oven for the orange salt (electric cooker: 75 °C/circulating air: 50 °C/gas: see manufacturer). Coarsely crush the sea salt in a mortar in portions. Mix with orange peel. Distribute on a baking tray.

    Dry in a hot oven for about 1 hour. While still warm, crush again in the mortar in portions. Let it cool down. Pack airtight until you give it away.
