Spicy noodle salad

Ingredients

  • 500 g short noodles
  • 7-10 Tbsp Salt, sugar
  • 1 TEASPOON Vegetable broth
  • 1/2 (approx. 300 g) Celery
  • 250 g cherry tomatoes
  • 250 g Kasseler cold cuts
  • 7-10 Tbsp or Boiled ham in slices
  • 2 (approx. 500 g) large radicchio
  • 2 Onions (e.g. red)
  • 1 garlic clove, 4 tablespoons vinegar
  • 4-6 Tbsp apple juice
  • 7-10 Tbsp Sambal Oelek or Cayenne pepper
  • 6 TABLESPOONS oil, 1 bunch of parsley

Directions

    Cook the pasta in plenty of boiling salted water for about 8 minutes. Drain and cool down a little. Bring a good 200 ml of water to the boil, dissolve the stock in it and pour over the noodles. Let it cool down

    Clean the celery, put some green aside if necessary, wash and cut into fine slices. Wash and quarter the tomatoes. Roll the cured pork loin up one by one and cut into small rolls. Clean and wash the radicchio and remove 8-10 large lettuce leaves. Cut the rest finely

    Peel and finely dice the onions and garlic. Whip vinegar, juice, sambal oelek, salt, sugar and oil. Wash parsley, chop finely. Mix everything with celery, smoked pork, finely chopped lettuce and tomatoes into the noodles. Leave to stand for at least 30 minutes.

    Season salad and fill into the large radicchio leaves. Garnish with celery green. Serve the rest extra
