Spätzle farmer's breakfast

Ingredients

  • 1 Stalk leek (leek)
  • 4 Gherkins
  • 4 Eggs (Gr. M)
  • 1/8 l Milk
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 2 TABLESPOONS Oil
  • 50 g Diced ham
  • 1 (300 g) Package
  • 7-10 Tbsp Organic egg spaetzle
  • 1-2 TEASPOONS butter/margarine

Directions

    Clean and wash the leek and cut into thin rings. Cut the gherkins into slices. Whisk eggs and milk. Season with salt and pepper.

    Farmer's breakfast is best prepared in 2 coated pans: Heat 1 tablespoon of oil in each pan and sauté half the leek in it. Add half ham and half spaetzle and fry over high heat for 2-3 minutes, turning. Season with pepper

    Add 1/2-1 teaspoon of fat to each spaetzle and let it melt. Pour half of the egg milk over it and let it simmer at medium heat for 6-8 minutes. Turn carefully and fry for about 2 minutes. Slide farmer's breakfast onto plates, fold over and serve with gherkins
