Clean and wash the leek and cut into thin rings. Cut the gherkins into slices. Whisk eggs and milk. Season with salt and pepper.

Add 1/2-1 teaspoon of fat to each spaetzle and let it melt. Pour half of the egg milk over it and let it simmer at medium heat for 6-8 minutes. Turn carefully and fry for about 2 minutes. Slide farmer's breakfast onto plates, fold over and serve with gherkins
