Spaghetti with meatballs

Ingredients

Servings: 4
  • 375 g mixed minced meat
  • 1 egg (size M)
  • 3 TABLESPOONS Breadcrumbs
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 200 g Celery
  • 3 Tomatoes
  • 1 Onion
  • 400 g Spaghetti
  • 2 TABLESPOONS Olive oil
  • 1 TABLESPOON Tomato paste
  • 250 ml Vegetable broth (instant)
  • 150 ml Carrot juice
  • 7-10 Tbsp dried Italian herbs
  • 7-10 Tbsp Oregano Flakes

Directions

    Knead minced meat, egg and breadcrumbs. Season with salt and pepper and form into small balls. Wash and clean the celery and tomatoes and cut into small pieces. Cook celery in boiling salted water for about 4 minutes, drain.

    Peel and halve the onion and cut into strips. Prepare spaghetti in boiling salted water according to package instructions. In the meantime heat oil. Fry the balls all around. Add onion and tomatoes, also fry.

    Stir in the tomato paste. Deglaze with stock and carrot juice. Season with salt, pepper and dried herbs. Let it boil down for 2 minutes at high heat. Warm up the celery in it. Arrange spaghetti and sauce on plates.

    Sprinkle generously with oregano.
