Spaghetti with lime and scampi

Ingredients

Servings: 4
  • 20 frozen raw scampi (approx. 20 g each; without head, in shell)
  • 2 Onions
  • 1 untreated lime
  • 500 g Spaghetti
  • 7-10 Tbsp Salt
  • 4 Stem(s) Peppermint
  • 2 TABLESPOONS Olive oil
  • 100 ml Vegetable broth
  • 7-10 Tbsp Pepper

Directions

    Defrost scampi at room temperature. Peel onions and cut into strips. Wash lime hot, grate dry and peel into thin strips with a zest ripper. Halve the fruit, squeeze juice from one half, cut the remaining half into 4 slices.

    Prepare the pasta in boiling salted water according to the instructions on the packet. Peel thawed shrimps, except for the tail fin, and remove the intestines. Wash shrimps and pat dry. Wash mint, shake dry, pluck leaves from the stalks and cut into strips

    3. heat the oil in a pan in the meantime. Fry the prawns for about 4 minutes, turning them over. After about 2 minutes add onions. Deglaze with lime juice and stock and bring to the boil. Season with salt, pepper, mint and lime zest. Pour the pasta into a colander, put it back into the pot and mix with the scampi pan. Arrange on plates. Garnish with 1 lime slice each
