Dissolve sugar in 75 ml water and vinegar. Season vigorously with salt, pepper and 1 pinch of cayenne pepper. Fold in the oil. Peel onions and chop finely. Wash parsley and chop finely, except for a little bit for garnishing.
Stir the onions, parsley and caraway into the dressing.
Cut the cheese into slices and pour the dressing over them. Serve, garnish with radishes and remaining parsley. Fresh pretzels taste good with it.
