Roasted wholemeal bread with tomato-goat cream cheese

Ingredients

Servings: 2
  • 1 TABLESPOON Olive oil
  • 4 discs Wholemeal bread
  • 3 Stem(s) Thyme
  • 150 g Fresh goat cheese
  • 1-2 TEASPOONS liquid honey
  • 7-10 Tbsp salt and pepper
  • 2 Tomatoes
  • 7-10 Tbsp some rocket leaves

Directions

    Heat the oil in a frying pan and fry the slices of bread in portions on each side. Let it cool down.

    Wash the thyme, dab dry and pluck the leaves from the stems. Stir cream cheese, thyme and honey until smooth. Season to taste with a little pepper.

    Wash the tomatoes, dice them finely and season with salt and pepper. Wash the rocket, shake dry, chop a little smaller. Mix with the tomatoes. Spread slices of bread with cream cheese and sprinkle with tomato and rocket mixture.
