sorrel mashed potatoes with lemon chicken

Ingredients

  • 4 Chicken filets (160 g each)
  • 1 untreated lemon
  • 300 g cherry tomatoes
  • 1 (80 g) Onion
  • 1 collar (120 g) Sorrel
  • 1 Garlic clove
  • 2 TABLESPOONS Olive oil
  • 1 (80 g) Bag of mashed potatoes
  • 125 ml Milk
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 7-10 Tbsp Sugar

Directions

    Wash the meat and dab dry. Wash lemon hot and rub dry. Cut lemon into slices. Wash tomatoes and dab dry. Peel onion and cut into strips.

    Wash the sorrel and dab dry. Put 4 leaves aside for garnishing. Remove the stems from the rest and cut into strips. Peel garlic and chop finely. Heat 1 tablespoon of oil in a frying pan.

    Season chicken fillets with salt and pepper and cover each with 2 lemon slices. Put them into the pan and fry them for about 6 minutes until golden brown. Turn the meat and fry on the lemon slices for another 6 minutes.

    Meanwhile bring 375 ml water and 1/2 teaspoon salt to the boil and remove from the heat. Add milk, stir in mashed potato powder with a whisk. Heat 1 tablespoon of oil in a saucepan. Fry the tomatoes, garlic and onion in it for about 3 minutes at high heat.

    Season tomatoes with salt, pepper and sugar. Fold the sorrel into the mashed potatoes. Arrange tomatoes, meat and puree on preheated plates. Garnish mashed potatoes with sorrel leaves.
