Snow croissant balls (Fairy tale: Snow Queen)

Ingredients

Servings: 40
  • 150 g Flour
  • 50 g ground almonds (without skin)
  • 50 g Sugar
  • 1 package Vanillin sugar
  • 1 pinch Salt
  • 1 Egg yolk (size M)
  • 100 g Butter
  • 200 g Icing sugar
  • 50 g Coconut flake
  • 7-10 Tbsp Cling film
  • baking paper

Directions

    Put the flour, almonds, sugar, vanillin sugar, salt and egg yolk in a bowl. Add butter in flakes. Work into a smooth dough with the dough hooks of the hand mixer. Then knead again with your hands and form into two balls of the same size. Wrap in foil and chill for about 1 hour. Then form a roll (approx. 20 cm long) from each ball.

    Cut each roll into 20 equally sized slices. Form 40 balls and place them on a baking tray lined with baking paper. Bake in the preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: level 3) for about 15 minutes. Mix icing sugar and coconut flakes. Remove the balls immediately from the baking tray, turn them into icing sugar and coconut mixture and let them cool down on a cake rack
