Ingredients

Servings: 4
  • 3 Eggs (Gr. M)
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 7-10 Tbsp Sweet peppers
  • 200 ml Milk
  • 125 g Spelt flour (Type 630)
  • 1 can(s) (425 ml) Chickpeas
  • 4 Garlic cloves
  • 4-5 Tbsp Lemon juice
  • 125 g Tahin (sesame paste)
  • 4 TABLESPOONS Olive oil
  • 1 Onion
  • 400 g minced beef
  • 1 TABLESPOON Tomato paste
  • 1 can(s) (425 ml) cherry tomatoes
  • 2 TABLESPOONS clarified butter
  • 1 (approx. 250 g) Avocado
  • 5 Stem(s) flat leaf parsley

Directions

    For the pancakes, beat the eggs and 1⁄4 TL salt with the whisk of the mixer until frothy. Stir in milk and flour briefly. Let the dough swell for about 30 minutes.

    In the meantime, rinse and drain the chickpeas. Peel and roughly chop the garlic. Puree finely with the chick peas, 100 ml water and lemon juice in a tall beaker with a hand blender. Stir in tahini and 3 tbsp. olive oil.

    Season to taste with salt and pepper.

    Peel and finely chop the onion. Heat 1 tablespoon of oil in a frying pan. Fry the minced meat crumbly while turning. Fry the onion briefly. Season with salt, pepper and paprika. Stir in tomato paste and sauté briefly.

    Add tomatoes and 100 ml water, bring to the boil and simmer for 3-4 minutes. Keep warm.

    Heat the clarified butter in portions in a pan (approx. 18 cm Ø). Bake 8 pancakes from the dough one after the other, turning them until golden brown. Remove and keep warm. Cut the avocado in half lengthwise and remove the stone.

    Remove the flesh from the skin, dice and press lightly with a fork.

    Wash parsley and shake dry, chop the leaves finely. Arrange 4 pancakes with some chopped tomato mix, avocado and hummus. Sprinkle with parsley. Serve the remaining pancakes with the rest of the chopped tomato mix, hummus and avocado.
