Semolina pudding with caramelized pears

Ingredients

Servings: 4
  • 500 ml Milk
  • 7 TABLESPOONS Sugar
  • 1 package Vanillin sugar
  • 25 g Butter or margarine
  • 80 g Common wheat semolina
  • 1 egg (size M)
  • 1 pinch Salt
  • 50 g Whipped cream
  • 2 Pears
  • 100 ml apple juice
  • 30 g Pistachio kernels

Directions

    Bring milk, 2 tablespoons sugar, vanillin sugar and fat to the boil. Remove from heat and sprinkle in semolina while stirring. Bring to the boil once, remove from the heat, cover and allow to swell for approx. 5 minutes.

    In the meantime, separate the egg. Beat the egg white until stiff, adding 1 tablespoon of sugar and salt. Whisk egg yolk with cream. Stir into the semolina. Fold in the beaten egg white. Fill into a bowl and let it cool down

    Peel and quarter the pears, remove the core. Cut pears into eighths. Melt 2 tablespoons of sugar in a frying pan. Deglaze with apple juice, bring to the boil and simmer until the caramel is dissolved. Turn the pears in the caramel, bring to the boil and steam for about 2 minutes while turning. Put them in a cold place. Chop the pistachios. Arrange semolina porridge with pears in small bowls and sprinkle with pistachios
