Curry sausage with pineapple sauce

Ingredients

  • 600 g fresh pineapple
  • 30 g flaked almonds
  • 400 ml Passion fruit nectar
  • 1 TABLESPOON Cornstarch
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 7-10 Tbsp Curry Powder
  • 2 TABLESPOONS Sunflower oil
  • 4 (150 g each) cured, smoked curry sausages

Directions

    Clean and peel the pineapple, put 4 beautiful leaves aside for garnishing. Cut out the hard stalk from the middle. Cut the fruit into pieces. Roast the almonds in a pan without fat, take them out.

    Stir 4 tablespoons of nectar and starch until smooth. Bring the remaining nectar to the boil, bind and bring to the boil again. Season to taste with salt, pepper and curry. Add pineapple pieces. Heat oil in a frying pan. Fry the sausages for about 10 minutes until crispy while turning.

    Remove, cut the sausage into slices and arrange in bowls with the sauce. Dust with curry, sprinkle with almond flakes and garnish with pineapple leaves. French fries taste good with it.
