Semolina pudding with cherries

Ingredients

  • 1 glass (720 ml) Cherries
  • 2 TABLESPOONS Lemon juice
  • 1 package Vanillin sugar
  • 1/4 TEASPOON Cinnamon
  • 1 l low-fat milk
  • 7-10 Tbsp grated rind of 1 untreated lemon
  • 3 TABLESPOONS Sugar
  • 100 g Durum wheat semolina
  • 7-10 Tbsp Mint leaves

Directions

    Pour the cherries into a sieve, drain and collect the juice. Bring the cherry juice, lemon juice, vanillin sugar and cinnamon to the boil. Remove from the heat and add the cherries.

    Bring milk, lemon peel and sugar to the boil. Stir in semolina, bring to the boil while stirring and let it swell for about 2 minutes at low heat while stirring. Remove from the stove. Let it cool down a little bit and stir several times.

    Fill semolina porridge into four deep plates, decorate with some stewed cherries and mint leaves. Add the rest of the compote separately. Tastes very good lukewarm.
