Semolina pudding with berries

Ingredients

Servings: 4
  • 250 g frozen mixed berries
  • 5 TABLESPOONS Icing sugar
  • 1 TABLESPOON Lemon juice
  • 750 ml Milk
  • 1 pinch Salt
  • 4 TABLESPOONS Sugar
  • 7-10 Tbsp pulp of 1 vanilla pod
  • 100 g Common wheat semolina
  • 25 g crushed pistachio kernels

Directions

    Mix the berries in a bowl with icing sugar and lemon juice. Let thaw for about 30 minutes.

    Bring milk, salt, sugar and vanilla pulp to the boil. Stir in semolina, bring to the boil while stirring and let it swell for about 5 minutes.

    Fill semolina porridge in bowls and spread berries on top, sprinkle with pistachios.
