Semolina flummery with fruits

Ingredients

Servings: 7
  • 1 l Milk
  • 125 g Whipped cream
  • 75 g Fresh cream
  • 100 g Sugar
  • 2 packages Vanillin sugar
  • 1 pinch Salt
  • 175 g Semolina
  • 7-10 Tbsp Juice of 1 lemon
  • 3 Eggs (Gr. M)
  • 2 Kiwis
  • 2 Bananas
  • 250 g Strawberries
  • 2 Apples
  • 1 can(s) (314 ml) Tangerines
  • 2-3 TABLESPOONS Maple syrup or honey

Directions

    Bring the milk, cream and crème fraîche to the boil. Add sugar, 1 vanillin sugar and salt to the milk. Stir in semolina, bring to the boil briefly. Stir in 3 tbsp. lemon juice. Let the semolina swell for about 5 minutes

    Separate eggs. Beat egg whites until stiff. Stir egg yolk into the hot semolina. Fold in the egg whites in portions. Pour into a large bowl.

    Peel or clean the fruit. Wash and chop. Drain the mandarins, catch the juice

    Mix 7 tbsp. mandarin orange juice and the rest lemon juice, 1 vanilla sugar and syrup. Mix with the fruit and serve with the semolina flummery
