Whisk egg and mineral water, season with salt, pepper and nutmeg. Wash and chop the salmon. Heat oil in a pan. Sauté the salmon in it. Add the egg and let it set. Wash the chives, cut them into small rolls and sprinkle them over the salmon.
Clean and wash the lettuce and tomatoes. Drain the lettuce. Mix lemon juice, salt and sweetener. Dribble over the lettuce. Arrange everything.
