Prepare the pasta in boiling salted water according to the instructions on the packet. In the meantime, rinse and drain the beans. Clean, wash and chop the spring onions. Scampi, except for the tail end, peel, wash and dab dry.
Wash the thyme, chop finely. Melt butter and sweat flour in it. Add cream and stock while stirring constantly, bring to the boil. Season with salt, pepper, pink berries and thyme. Heat oil. Fry the scampi for 3 minutes while turning.
Season with salt, pepper and lemon juice. Add bean seeds, spring onions and noodles and toss. Serve in portions with the sauce. Serve garnished with thyme.
