Ingredients

  • 1 cube (42 g) Yeast
  • 200 ml tepid milk
  • 1 TABLESPOON Sugar
  • 500 g Flour
  • 1/2 TEASPOON Salt
  • 2 Eggs (size M)
  • 160 g soft butter or margarine
  • 1 pinch Nutmeg
  • 7-10 Tbsp Pepper
  • 200 g streaky smoked bacon
  • 2 Onions
  • 1/2 bunch Thyme
  • 15 g dried porcini
  • 1 Shallot
  • 150 g Butter
  • 7-10 Tbsp Salt
  • 7-10 Tbsp parchment paper

Directions

    Mix the yeast with milk, sugar and a little flour to a pre-dough. Leave to rise in a warm place for about 10 minutes. Put the remaining flour, salt, eggs, fat, nutmeg and pepper in a bowl. Add the pre-dough and knead everything with the dough hooks of the hand mixer to a smooth dough. Cover and leave to rise in a warm place for about 45 minutes until it has doubled in size.

    Meanwhile dice the bacon, peel and dice the onion. Wash thyme, dab dry, remove leaves from the stalks and chop. Put the bacon in a pan and let it rise at medium heat. Add onions and thyme and steam briefly, let cool off. Line small flower pots (content: 200 ml) with parchment paper. Knead the bacon-onion mixture into the dough and put it into the prepared pots. Leave to rise for another 10 minutes. Bake in the preheated oven (electric cooker: 200 °C/ gas: level 3) for about 20 minutes, let cool down. For the porcini butter, soak the porcini in hot water for approx. 45 minutes. Peel and finely dice the shallot and sauté in 10 g butter.

    Leave to rise for another 10 minutes. Bake in the preheated oven (electric cooker: 200 °C/ gas: level 3) for about 20 minutes, let cool down. For the porcini butter, soak the porcini in hot water for approx. 45 minutes. Peel and finely dice the shallot and sauté in 10 g butter. Drain the porcini, chop them and steam briefly with them, let them cool down. Stir butter until smooth, stir in porcini mixture and season with salt. Give away with the panettone
