Ingredients

  • 1.25 kg ready-to-cook carp
  • 7-10 Tbsp Salt
  • 1 kg Mushrooms
  • 4 TABLESPOONS Oil
  • 7-10 Tbsp Pepper
  • 2 Eggs
  • 50 g Butter or margarine
  • 100 g Breadcrumbs
  • 750 g Potatoes
  • 1 collar Parsley
  • 7-10 Tbsp wooden sticks
  • 7-10 Tbsp Kitchen yarn
  • 7-10 Tbsp Lemon wheels and parsley

Directions

    Wash the fish, dab dry and rub with salt. Clean 250 g mushrooms and chop finely. Heat 1 tablespoon of oil in a pan, fry the mushrooms in it and season with salt and pepper. Deglaze with 3 tablespoons of water and braise for 10 minutes.

    Separate eggs. Cream fat and egg yolk. Beat egg white until stiff. Add breadcrumbs and mushrooms to the fat and egg yolk mixture and mix well. Fold in the egg white and season with salt and pepper. Fill the fish with the filling, pin it with wooden sticks and tie it up with kitchen string.

    Place the fish on a fat pan, drizzle with 1 tablespoon of oil and bake in a preheated oven (electric cooker: 200 °C / gas: level 3) for approx. 40 minutes. Wash and peel the potatoes and cook in boiling salted water for about 20 minutes.

    Clean the rest of the mushrooms, cut them in half as desired and fry them in the remaining hot oil in a pan while turning for about 10 minutes. In the meantime, wash the parsley, dab dry and chop finely.

    Drain the potatoes. Sprinkle potatoes and mushrooms with parsley. Take the fish out of the oven. Arrange fish, mushrooms and potatoes on a plate and serve garnished with lemon wheels and parsley as desired.
