Sauerkraut raw food

Ingredients

  • 500 g fresh sauerkraut
  • 250 g Carrots
  • 3 Spring onions
  • 2 small sour apples
  • 3 TABLESPOONS Lemon juice
  • 1/2 bunch Dill
  • 5 TABLESPOONS Vinegar
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 1/2 TEASPOON Sugar
  • 5 Tbsp-OIL
  • 1 small head endive or lettuce

Directions

    Roughly chop the sauerkraut. Clean and wash the carrots and grate them on the coarse side of the raw vegetables. Clean and wash spring onions and cut into fine rings. Wash and quarter the apples and remove the core.

    Cut apples into thin slices and sprinkle with lemon juice. For the marinade, wash the dill, dab dry and cut finely. Mix vinegar with salt, pepper and sugar. Add the dill and beat the oil into it.

    Season the marinade to taste. Pour over the prepared ingredients and mix loosely. Cover and let stand for approx. 30 minutes. In the meantime, clean and wash the lettuce leaves, dab them dry and place them on a plate.

    Arrange the raw vegetables on top.
