Salmon scrambled egg with prawns and dill on wholemeal bread

Ingredients

  • 150 g Cucumber
  • 1 shallot (or 1/2 small onion)
  • 1 TABLESPOON White wine vinegar
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 1 TABLESPOON Oil
  • 2 Lettuce leaves
  • 2-3 stem(s) Fresh dill
  • 50 g Smoked salmon
  • 2 Eggs (size M)
  • 2-3 TABLESPOONS Milk
  • 7-10 Tbsp grated nutmeg
  • 10 g Butter or margarine
  • 40 g cooked shrimps without shell
  • 1 large slices of wholemeal bread (60-70 g)
  • 7-10 Tbsp Dill flower

Directions

    Wash the cucumber and cut it diagonally into thin slices. Peel and finely dice the shallot. Mix vinegar, shallot, salt and pepper. Finally, add the oil. Put the cucumber slices in a small bowl, pour the vinaigrette over them and let them soak a little. Wash the lettuce leaves and dab dry. Wash dill, dab dry and chop finely, except for a little garnish.

    Cut salmon into strips. Beat the eggs, milk, salt, pepper, nutmeg and dill, except for 1/2 teaspoon. Heat the fat in a pan and pour in the egg mixture. Sprinkle the salmon and shrimps over it and let them simmer at low to medium heat. Cover wholemeal bread with salad leaves and add the scrambled eggs. Sprinkle with remaining dill and arrange on a plate with cucumber salad. Serve garnished with remaining dill and possibly a dill flower
