Wash the thyme, dab dry, pluck leaves from the stalks and chop, except for something to garnish. Mix lemon juice, 2 tablespoons water, honey, salt and pepper. Whip the oil into the mixture. Fold in chopped thyme. Peel and wash the carrots, cut them in half lengthwise and cut them diagonally into thin slices.
Wash the apple, quarter it, remove the seeds and cut diagonally into thin slices. Mix the apple and carrot slices with the marinade. Clean, wash and drain the salad and pluck into bite-sized pieces. Mix the salad with the marinade and serve. Garnish with thyme
