Peel and wash the potatoes and cut them into 2-3 cm pieces. Clean, wash and peel the soup greens and also cut them into large pieces. Peel and roughly chop the onions. Heat clarified butter in a large pot, sauté onions in it until translucent, add potatoes and soup vegetables and pour on 1 litre of water, add broth and simmer covered for about 20 minutes.
Cabanossi cut into slices. Add the sausages and cabanossi to the stew and simmer for another 5 minutes. Season well with salt, pepper, nutmeg and mustard. Wash parsley, shake dry, pluck leaves from the stalks and chop finely.
Arrange the stew, sprinkle with pepper and parsley.
