Rump steak on soba noodles with miso dressing

Ingredients

  • 1 small piece (about 10 g) of ginger
  • 100 ml Poultry stock
  • 1 TABLESPOON red miso paste (Asian shop)
  • 5 TABLESPOONS Soy sauce
  • 2 TABLESPOONS Mirin (Asian shop)
  • 7-10 Tbsp brown sugar, salt, pepper
  • 2 Rump steaks (à approx. 175 g)
  • 1 TABLESPOON Oil
  • 120 g Soba noodles (Asian noodles)
  • 80 g Shiitake mushrooms
  • 1 TEASPOON Sesame seeds
  • 1 TABLESPOON Sesame Oil
  • 2 Spring onions
  • 1 piece(s) (approx. 60 g) Radish
  • 4–5 Radishes
  • some stem(s) Coriander

Directions

    Peel and finely grate the ginger. Mix with stock, miso paste, soy sauce, mirin and 1 tablespoon of sugar. Rinse meat, dab dry, season with salt and pepper. Heat the oil in a grill pan and fry the steaks on each side for 2-3 minutes.

    Remove, place in a flat dish, pour the marinade over it and set aside.

    Cook the pasta in approx. 1 1⁄2 l of boiling water according to the instructions on the packet. Pour off, rinse with cold water and drain. Clean mushrooms, wash if necessary and cut into slices. Roast sesame seeds in a pan without fat, remove.

    Heat sesame oil, fry mushrooms for 1-2 minutes, remove.

    Clean, wash and cut the spring onions into rings. Clean and peel the radish and cut into thin strips. Clean, wash and chop the radishes. Mix noodles, mushrooms, spring onions, radish and radishes in a bowl.

    Remove meat from the marinade and cut into thin slices. Stir the marinade into the pasta mixture, season to taste again if necessary. Serve the noodle salad with the meat. Sprinkle with sesame and coriander leaves.
