Peel and chop the garlic. Clean and wash the chilli and cut it into rings with the seeds. Leek onions clean, wash and cut into rings. Pour boiling salted water over rice noodles and let them swell for about 5 minutes.
Fry the ground pork in hot oil until crumbly. Fry the garlic, chilli and spring onions briefly. Stir in lime juice, soy and chilli sauce, season with sugar. Drain the noodles and serve with ground pork. Wash the coriander, remove the leaves and sprinkle over the pasta.
