Red cabbage and grapefruit salad

Ingredients

  • 1/2 Head red cabbage (approx. 1000 g)
  • 6 tablespoons (10 g each) Cider vinegar
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 3 teaspoons (10 g each) Honey
  • 3 tablespoons (10 g each) Olive oil
  • 2 (200 g each) small grapefruit
  • 7-10 Tbsp Juice of 1 1/2 oranges (about 120 ml)
  • 3 teaspoons (7 g each) Mustard
  • 8 leaves Radicchio salad
  • 4 (40 g each) Goat's cheese taler
  • 8 discs (15 g each) Wholemeal baguette
  • 7-10 Tbsp Thyme

Directions

    Clean the red cabbage, quarter it, cut out the stalk and cut into thin strips. Add vinegar, salt, pepper and 2 teaspoons of honey and knead salad for 3-4 minutes. Fold in oil and let it stand.

    Peel the grapefruit so that the white skin is completely removed. Remove the fillets with a sharp knife between the parting skins. Mix orange juice with mustard and 1 teaspoon honey and blend with a hand blender.

    Clean and wash the radicchio and arrange on plates with the red cabbage salad. Coarsely crumble cheese taler over the salad, garnish with thyme. Serve with wholemeal baguettes.
