Wash and halve or quarter the tomatoes. Wash and clean spring onion and cut into thin rings. Wash, clean and roughly grate the zucchini. Wash basil, shake dry and roughly chop the leaves, except for 1-2 pieces for garnishing
Prepare the pasta in boiling salted water according to the instructions on the packet. Heat the oil in a frying pan. Sauté the tomatoes and the light part of the spring onion rings for about 2 minutes. Season with salt and pepper. Add zucchini, chopped basil and the rest of the spring onion and remove from heat
Drain the pasta. Add the mozzarella and pasta to the tomatoes. Season again with some salt and pepper. Arrange the noodles on a plate and garnish with basil
