Noodles with vegetable sauce

Ingredients

  • 100 g Mushrooms
  • 1/2 425 ml can of white beans
  • 1 (approx. 400 g) small broccoli
  • 1 Garlic clove
  • 5 Stem(s) Basil
  • 1 small red pepper
  • 1 small zucchini
  • 7-10 Tbsp Salt
  • 400 g Wholemeal spaghetti
  • 2 TABLESPOONS Olive oil
  • 1 jar (400 g) Tomato sauce with herbs
  • 7-10 Tbsp Pepper

Directions

    Clean and clean the mushrooms and cut them into slices. Put beans in a sieve, rinse under cold water and drain well. Cut broccoli into very small florets. Peel garlic and chop finely. Wash the basil and chop the leaves of 2 stems finely. Quarter the peppers, clean, wash and cut into small cubes. Wash and clean the zucchini and cut into small cubes

    Blanch broccoli in boiling salted water for about 3 minutes. Remove and rinse briefly in cold water. Prepare pasta in boiling salted water according to package instructions. Heat the oil in a pan. Sauté the mushrooms and peppers for about 3 minutes, then add the zucchini, chopped basil, beans and garlic. After another 3 minutes add tomato sauce and simmer for 2-3 minutes. Season to taste with salt and pepper

    Drain the pasta. Arrange noodles and vegetables and garnish with basil leaves
