Clean the cauliflower, remove the florets from the stalk, wash and shake dry. Cut the florets into small pieces according to size. Sprinkle with oil, season with salt and pepper. Spread on a baking tray and cook in the preheated oven (electric cooker: 200 °C/ circulating air: 175 °C/ gas: see manufacturer) for about 30 minutes.
Wash the thyme, shake dry, remove leaves from the stalks and chop. Coarsely grate the cheese. About 20 minutes before the end of the baking time, sprinkle with vinegar, sprinkle with thyme and cheese and bake until done.
